In researching the catfish industry of the Mississippi Delta, the landscape architect and educator Forbes Lipschitz found a narrative quite apart from conventional views of catfish as a downmarket food product reliant on undesirable land use. Brett Anderson, who has long reported on food in the southern U.S., captured Lipschitz’s layered understanding of catfish as a sustainable, affordable staple that generates considerable employment as well as her favorable estimation of catfish pond landscapes as ecologically productive habitats surrogate to the region’s wetlands long since drained for flood control and farming.
