In the Mississippi Delta, the landscape architect and educator Forbes Lipschitz developed a favorable estimation of catfish counter to its image as a downmarket food reliant on undesirable land use. Brett Anderson has long reported on food in the southern U.S. and captured Lipschitz’s understanding of catfish as a sustainable, affordable staple that generates jobs in a region of pond landscapes that act as surrogate wetlands.
